Both colloidal and flavor stability are considered important quality benchmarks of beer. Even after worldwide transport or months of storage in supermarkets, beer should still be enjoyable to drink. Brewtan® B, Brewtan® C and Brewtan® F will provide colloidal and flavor stability successfully and economically. Brewtan B, Brewtan C and Brewtan F are 100% natural gallotannins specially designed for the brewing industry. These tannins react with the haze sensitive proteins (proteins rich in proline) and SH-group containing proteins by adsorption and precipitation. In addition to interacting with these proteins, the Brewtan products are able to chelate iron. This results in the inhibition of the Fenton oxidation reaction.
